What is Kombucha?

Ah, the age old question that makes our ears sing with delight! To put it simply, kombucha is a fermented tea drink.

Traditionally made with four simple ingredients - tea, water, sugar and a SCOBY (Symbiotic culture of bacteria and yeast) - kombucha is a refreshingly sparkling, hydrating and tasty soft drink, with a unique flavour profile that should be a lovely balance of sweet and tart!

Our kombucha is fermented for 1-2 weeks, where the yeast consumes the sugar and converts it into alcohol, before the bacterias then step in and convert the alcohol into into organic acids - these are what give booch the party-in-your-mouth tang!

Additionally booch holds many health claims such as aiding digestion and boosting your immune system, as well as all the other good stuff that comes from consuming fermented foods! (Though we love you, we’ll leave you to make your own health decisions…we’re not nutritionists!)

Does it contain alcohol?

Whilst there is alcohol produced in the fermentation process, after the alcohol is converted into acids by the bacteria there are only very small amounts found in the final product. This makes it a great low alcohol alternative to that cheeky Friday night beer or wine! *

Why should I try Zak’s Kombucha?

To keep it short and sweet, we da best. At least we think we are! For real though, we do want to be the best.

Here at Zak’s, we only use premium ingredients to produce the best possible final drink. We use forest-friendly tea from our friends at Monteaco, organic cane sugar, and locally sourced (often hand foraged!) ingredients from around the Kent countryside. We also brew the traditional way, in small glass jars. Although this requires more effort on our end, it allows us much more control over the brewing process, and we firmly believe that this makes all the difference between producing good booch vs the best booch!

Lastly and probably most importantly, our booch isn’t filtered or pasteurised, maintaining all the live cultures and happy microbes that kombucha should have! Because of this, it’s not unusual for our booch to contain a little sediment, or even it’s own little scoby…this just means it’s super healthy!
